Glowing Pumpkin Pie Oats

I don’t really care about calendars. If pumpkin purée is my in my kitchen, Fall is officially here🔥🍁Even if it is still shorts weather🙌🏻 I made my first pumpkin oats in a while yesterday and let me tell you: the result was pretty magical. I either make my own pumpkin purée if I’m feeling aggressive 🎃 or buy plain pumpkin purée. The pre-seasoned pumpkin pie mix comes with a lot of added sugar and nobody needs that🙌🏻 Here is how to make the most delicious pumpkin pie oats without any added sweetener:

RECIPE:

2 packets Right Foods Mega Oats or just over 1/2 cup oats
1/4 cup pumpkin purée (canned or steamed, then pureed)
1/2 cup water
1/2 cup almond milk
1/2 tsp vanilla extract or powder
1/2 tsp pumpkin pie spice
1/4- 1/2 tsp turmeric (depending on your taste

1 medjool date, chopped (for extra sweetness)

A dash of cinnamon

Stir all ingredients together and cook over medium on the stove for about 5 minutes. Remove from heat, then add your toppings. I, as you could probably tell from 2 seconds on my feed, personally go crazy with mine. Here are a few suggestions:

- Cashew or plant-based yogurt (swirl some in the middle too!)
- your favorite protein bar, chopped

- pumpkin seeds
- pomegranate seeds
- almond butter
- bee pollen
