I’ve been LOVING savory breakfasts lately and had to share this amazing recipe with you after I was inspired to make these on a recent trip. These easy Grain-Free Savory Chickpea Pancakes take just minutes to prep, are oil-free, and are unbelievably nourishing. They’re fantastic at any time of the day and are real crowd-pleasers. Serve them up with baby tomatoes, cilantro, avocado, and extra tahini and you’ve got an unbelievable feast!
Ingredients:
2 cups chickpea or fava bean flour
1 tsp garlic powder
1 tsp kosher salt
1 pinch of ground pepper
1 teaspoon baking powder
1 ½ cups water
2 tablespoons tahini
½ cup green onion, finely chopped
¼ cup red bell pepper, finely chopped
½ cup chickpeas, chopped
1 avocado
a big handful of cherry tomatoes
fresh cilantro
ground pepper
Directions:
Mix the dry ingredients together in a large bowl, then add the water and tahini and whisk together until there aren’t any lumps. Add the chopped green onion, bell pepper, and chickpeas and stir well.
You’re now ready for some savory pancake goodness! Take a large non-stick skillet or griddle (I still rub olive oil on with a paper towel for some extra flavor) and heat on medium for about a minute. Add your pancake batter, spreading evenly until its’ about 1/4 inch-thick. Cook for 4-5 minutes on each side, then serve with avocado, cherry tomatoes, extra tahini, fresh cilantro, and some ground pepper to top. Enjoy!
