Say hello to the perfect breakfast for anyone who doesn't have time to cook in the mornings: Easy Matcha Chia Pudding. This is an incredibly simple dish to but together and is perfect for throwing in your bag as you head out the door for your morning commute. It is bursting with color, will keep you full for hours, and is a wonderfully delicious way to get your glow while on the move. Chia seeds expand to about 8x their size when mixed with almond milk and are loaded with fiber to keep you full and Omega-3s to keep you going throughout the day. Matcha is something that's recently become so popular in the states, but has been enjoyed in Japan for over a thousand years. What makes matcha so amazing and so different than normal teas is that is consumed as a whole leaf tea powder rather than a liquid that's been soaked with tea leaves. That means that its antioxidants and gentle energy boost come out in a much more potent form. It also just so happens to be absolutely gorgeous and completely delicious!

 Matcha Chia Pudding

Serves 1

Total Time: 10 minutes

Ingredients:

6 tablespoons chia seeds
1 cup almond milk
1 tsp matcha powder
1 tbsp maple syrup
1/8 tsp cinnamon ground

My favorite toppings:
Tangerine slices
Pomegranate seeds
Bee Pollen
Cacao Nibs

Directions:

This recipe is super easy. Just add the almond milk, matcha tea powder, maple syrup. and ground cinnamon together in a mug or bow. Whisk together until blended, then add the chia seeds. Leave the chia seeds to soak for about 10 minutes, then add your favorite toppings and enjoy! You can also prep the chia pudding the night before and let them soak overnight. Totally works both ways.
