Fact of life: happy days start with paleo, gluten-free, and vegan tahini sea salt chocolate chip cookies. I was inspired by my friend Nicole from Kale Junkie to make a vegan version of her famous cookies. They’re gooey, totally delicious, and have a subtly savory undertone in their flavor from the tahini that compliments the chocolate. Adding some sea salt on top ties all the flavors together and makes them pop. Make these for anyone regardless of their dietary preferences. They’ll never know how good the ingredients actually are!
Yields 12
Ingredients:
- 1 1/4 cup almond flour
- 2/3 cup tahini
- 1/3 cup coconut oil
- 1/2 cup coconut sugar
- 1 chia “egg” (2 tbsp chia seeds with 2 tbsp almond milk)
- 1 tsp baking soda
- 1 bar paleo chocolate or your favorite dark chocolate, chopped
- sea salt flakes for topping
Combine all ingredients except the chocolate and sea salt in a large bowl. Mix thouroughly. Add the chocolate. Stir again.
Line a large baking sheet with parchment paper. Form dough into cookies on sheet. Top with sea salt.
Bake at 350*F for 10-12 minutes
