It’s a great change if you’re already in the habit of having oatmeal for breakfast, but it’s also a perfect option to add into your weekly rotation. Even better, the base recipe is very versatile and would make a perfect afternoon snack or quick and healthy dessert.
These Beauty-Boosting Baked Oats require only 6 main ingredients (plus whatever you want to add to jazz them up, like cinnamon, vanilla, chocolate, etc) that you can put right into a blender and pop into the oven. Minimal effort but lots of flavor and a delicious cakey texture? Yes please!

Beauty-Boosting Vegan Baked Oats (3 Ways!)
- 1 cup rolled oats
- ¾ cup almond milk
- 1 flax egg (1 tbsp ground flax + 3 tbsp water)
- 1 banana
- 1 scoop Copina Co. Original Plant-Based Collagen Boost
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1 tsp cinnamon
- Dark chocolate, fruit, or nut butter for topping (optional)
- Blend ingredients together
- Pour into a baking dish or several small ramekins
- Add any mix-ins to batter, if desired
- Bake at 375°F for 30 minutes
- Add your favorite toppings and enjoy!
