While some people love having matcha on its own, we think adding something a little sweet to it makes the taste even more delicious. Umm everything! Seriously though, these cookies are super versatile and are great as a snack or as a dessert. We love them with a glass of plant milk or a hot matcha latte on the side. They’re even great for dunking!

 

These cookies are completely vegan and gluten-free, and the flour base is a blend of the Matcha Beauty and gluten-free all-purpose flour. We use a flax egg and coconut oil to pull the dry ingredients together, and the result is just divine.

Chocolate Chip Matcha Cookies

Ingredients

  • ⅔ cup coconut oil (melted)
  • 1 flax egg (1 Tbsp ground flax seeds + 3 Tbsp water)
  • 1 tsp vanilla extract
  • ½ cup coconut sugar
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp salt
  • 3 tsp Copina Co. Matcha Beauty
  • 1 ¼ cup all purpose flour
  • ½ cup vegan chocolate chips

Instructions

  1. Preheat the oven 350 F. In a bowl whisk together the wet ingredients, add in the flour, salt, baking powder, baking soda, + Copina Co. Matcha Beauty. Mix until a dough forms. Fold in the chocolate chips, and form balls that are 1-2 Tbsp worth dough. Place them on a lined baking sheet. Bake for 15 minutes. Allow to cool and enjoy!
