Copina Co. Chocolate Chip Matcha Cookies

What is matcha?

Matcha is a whole-leaf Japanese green tea powder that’s made from dried tea leaves. Matcha is consumed by simply whisking it into hot water, instead of steeping like regular tea. Because of the way it’s cultivated and the fact that the whole leaf is consumed, matcha is packed with antioxidants and skin-boosting benefits. We love Japanese matcha so much that we wrote a whole guide to it and included it in our Matcha Beauty vegan collagen boost blend.

Why put matcha in your cookies?

Putting matcha green tea in your cookies might sound weird, but trust us – it works. There’s a reason matcha cakes, matcha croissants, matcha truffles, matcha muffins, and yes – matcha cookies are so popular. Matcha’s fine texture blends perfectly into the delicate flours used in your favorite desserts and makes an amazing healthy addition to any treat.

What does matcha taste like?

Ok, so matcha is kind of amazing. It has a light, delicate, and slightly earthy taste. It also pairs amazingly well with dark chocolate, which is why we love the chocolate chips in these cookies so much. While some people love having matcha on its own, we think adding something a little sweet to it makes the taste even more delicious. That’s why we include creamy coconut milk to the Matcha Beauty vegan collagen boost blend. It makes the tastiest addition to your baked treats.

What should you pair with your chocolate chip matcha cookies?

Umm everything! Seriously though, these cookies are super versatile and are great as a snack or as a dessert. We love them with a glass of plant milk or a hot matcha latte on the side. They’re even great for dunking!

These cookies are completely vegan and gluten-free, and the flour base is a blend of the Matcha Beauty and gluten-free all-purpose flour. We use a flax egg and coconut oil to pull the dry ingredients together, and the result is just divine.

Here’s what our community has to say about our Matcha Beauty vegan collagen boost blend.

 Chelsea says:

“I'm admittedly kind of a matcha snob...so I didn't know if I'd love this matcha blend from copina co. I WAS WRONG. It's amazing. Subtly sweet, mild, and blends perfectly with nut milk for a latte. It also has 28 servings (about the same you'd get on a tiny canister of matcha), for the same or less money as the matcha itself. Can't say enough good things about this blend!!”

Michelle says:

“ I have seen a noticeable difference in my overall wellness from Matcha Beauty. Matcha Beauty has been my go to ( hot or over ice). I have seen a noticeable difference in my overall wellness and love how I can use it to experiment with different recipes.( made pancakes and muffins so far). I listen to my body and my body loves how much @copinaco does what it says it’s going to do.”

Zoey says:

“Def recommend! I’m on my second pouch of this matcha blend and have been drinking it every day. I have horribly weak nails and can’t believe how fast I have seen results from this. They are so much stronger and healthier!! I can’t wait to keep drinking this blend and see how it helps my hair too!”
