Spiced Apple Loaf

1⁄2 cup melted coconut oil
1⁄4 cup yogurt
1⁄4 cup maple syrup
1⁄4 cup milk of choice
1 1⁄2 cups gluten free flour
2 scoops of Copina Co. Original Vegan Collagen Creamer
1⁄4 tsp salt
1 tsp baking powder
1 tbsp cinnamon
1⁄2 tsp nutmeg
1 diced apple
1⁄4 cup dairy free butter
Milk of choice
For the loaf
Add the melted coconut oil, yogurt, maple syrup, and milk to a bowl and whisk until combined.
Add the dry ingredients and mix gently to form a batter.
Stir in the diced apple.
Transfer the batter to a greased loaf pan and bake at 350°F for 50-60 minutes.
While the loaf is baking, mix together the butter, powdered sugar, and cinnamon to form a glaze. Add milk as needed, it shouldn’t be too thin but should be drizzleble.
Allow the loaf to cool before drizzling with the glaze.
