Our Peanut Butter and Jelly Oatmeal Cookies are a simply delicious cookie made from classic rolled oats, creamy peanut butter and of course, you can’t forget about the jelly! It’s just like your favorite childhood sandwich, but in a healthy cookie form!
Every ingredient in this cookie recipe is rather important, but the one we want to make sure you remember to include in your cookie is our Original Beauty Plant-Based Collagen Support Blend. This special ingredient is made with the most amazing herbalist-approved plant-botanicals like amla berry, tremella mushroom extract, and gotu kola that support your hair, skin, and nail health. You can add it to your lattes or baked goods without changing the flavor of your beverage or snack, making it one of our more popular collagen support blends. That reason alone was exactly why we chose to include our Original Beauty Blend over our Vanilla Beauty Blend in our Peanut Butter and Jelly Oatmeal Cookie recipe. We still wanted to incorporate those wellness benefits, but didn’t want to compromise that classic PB & J flavor.
Let’s get into the rest of the ingredients!
Rolled Oats: The base of this cookie is made from old-fashioned rolled oats. Oats are a great source of fiber and antioxidants. Once baked, the oatmeal in our cookie recipe will have a slightly crisp edge and a soft and chewy center, making for the perfect bite. Banana: The key to getting a super soft center to your cookie is by adding in a ripe banana. The softer the banana, the chewier the cookie! Bananas are high in potassium and other nutrients and a staple ingredient in this PB & J Oatmeal Cookie Recipe.
Vanilla Extract: Now, we’re moving on to the smaller pantry staples. Adding in a dash of vanilla extract to this recipe will add a touch of sweetness. If you are one who has a bigger sweet tooth, add in a touch more vanilla, and perhaps consider swapping out our Original Beauty Collagen Support Blend for our Vanilla Beauty Collagen Support Blend like we mentioned above. If you’re going to add in more vanilla, you might as well make that vanilla flavor even more prominent, right?!
Maple syrup: Maple syrup is another ingredient that can contribute to the sweetness of your cookie, and it also helps crisp up the edges of your cookie in the baking process. Try to avoid using “breakfast syrup” which doesn’t have the same powerful maple flavor that pure syrup contains.
Cinnamon: Cinnamon is just another one of those staple ingredients that we always feel compelled to add into our recipes. It pairs so seamlessly with the oats, and makes the recipe feel complete.
Creamy Peanut Butter: What would a Peanut Butter and Jelly Cookie be without the peanut butter?! Creamy peanut butter is the way to go if you want your cookies to stay nice and soft. Crunchy peanut butter tends to make them crumbly because it's thicker and, well, less creamy! So, for cookies that hold together well and stay soft, stick with creamy peanut butter.
Jelly: Peanut butter’s partner in crime … jelly! This is where you can start to personalize your cookie a little bit. You can use a classic strawberry jam for your jelly center, or you may want to opt in for a blackberry jam. Whichever flavor you prefer, we just suggest you try and find some locally made jam for more natural and less processed ingredients.
Chocolate Chips: The final ingredient to top your cookie with is some melted dark chocolate chips! Drizzle a little bit of this on your PB & J cookies for some extra ooey gooey goodness! If you really want to get fancy with it, you can mix in our Cacao Beauty Plant-Based Collagen Support Blend into your melted chocolate for an extra boost of collagen support.
