Vegan chocolate baked oatmeal cake? Umm yes please! This recipe is just downright irresistible.
Breakfast can incite some pretty strong feelings for people. It often seems like there’s 2 camps: nutritious or basically dessert for breakfast. Don’t worry – we don’t think you have to choose. At Copina Co. our philosophy is that your breakfast deserves to taste ridiculously amazing and that the best treats are ones that do your body food.
But baked oatmeal? If you’re a staunch stovetop oat cooker, you might not be sure what all the hype is about. In an effort to tell you how very real the hype is and how very amazing baked oatmeal cakes are for breakfast, we’ve put together a whole blog post about it just for you. Trust us here – one bite of baked oatmeal and you’ll never go back to making it the old way.
We didn’t just stop there on our journey towards making the best breakfast known to man/ womankind. Ya – that’s right. We made a vegan chocolate baked oatmeal cake. This might sound pretty hard to make, but it’s completely easy. We used our Cacao Calm Plant-Based Collagen Boost Blend as a beauty boost and cacao powder replacement to add an amazing chocolatey taste to the baked oats and it’s nothing short of amazing. All you have to do to prepare baked oats is combine all the ingredients into a bowl, baking dish, or ramekin and then bake – that’s it!
We love making all kind of baked oatmeal cakes. You can either make them single serve for one person or do a multi-serve batch for a group of people, or just you to enjoy over a few days. We like adding some baking powder and almond milk to help it rise and feel extra fluffy.
How do you top it?
We’ve got you covered. Baked oats are amazing on their own, but are also fantastic with some fresh berries and nut butter drizzled on. We’re personally huge fans of peanut butter with the chocolate flavor from the Cacao Calm. Some people also try adding banana slices, pear slices, or apple slices to the top of the oats just before baking and they come out of the oven warm, extra sweet, and incredibly beautiful.
You can even convert existing oatmeal recipes into baked oatmeal cake recipes by adding extra plant milk and a touch of baking powder. Here are some of our favorite oatmeal recipes:
Mixing beet powder, spices, and some vegan vanilla protein powder into your oats is an amazing way to spice them up. This is one of our most popular recipes. We love its vibrant color and easy prep! We top the oats with sliced banana and grain-free granola
Blue majik (blue spirulina) is a fresh water algae that is rich in B12s and is a complete protein. It’s also great for boosting antioxidant levels. It can taste a bit like dirt on its own (we’re just being honest!) so we love mixing it into our oats with a little something sweet to give a nutritional boost to our meal. The oats also get an absolutely fantastic color this way. Add in a little lavender tea water to make it just plain perfect. Click the link for the how-to.
We love adding our creamy and slightly sweet Matcha Beauty Plant-Based Collagen Boost Blend to oats. It gives a beautiful green color to the mixture and helps us get a sustained energy boost plus vegan collagen boost benefits to start our day. You don’t need to let the mixture sit overnight if you’re making a baked oat cake. Rather, just combine the ingredients and bake.
