Beauty-Boosting Carrot Cake Buckwheat "Oats"

Our founder Carolyn's favorite breakfast recently has been this delicious and creamy carrot cake buckwheat "oats". She talks more about her inspiration for the recipe on her Instagram about why she loves this nutrient dense breakfast recipe!

Through listening to an episode of Everything is the Best by Pia Baroncini with Dr.Aviva Romm, Carolyn learned about how buckwheat is really beneficial for regulating blood sugar. She started playing around with recipes to incorporate it into her morning and loves this carrot cake variation. She uses buckwheat groats if she has the time, but mainly during the week uses Bob's Red Mill buckwheat cereal so she can still get in the amazing benefits.

To get a beauty boost into her AM's she adds in our vegan collagen supports. You could add in any of our flavors, but this recipe uses our vanilla vegan collagen support blend to add some sweetness! Our vegan collagen blend also adds in some more vitamin C with our amla berry extract as does the fruit we top it off with!

Amla Berry is also known as Indian Gooseberry or Amalaki in Ayurveda and has been used in India for centuries for its beauty and vitality-boosting properties.* Amla berry is a fruit that is grown on a tree. It’s often found wild and cultivated in all parts of India. It has a rich history in Ayurveda and has been traditionally used as a general tonic both topically and internally as a coolant to moderate excess heat and inflammation in the body and also to increase vitality, enhance digestion, stimulate hair growth, and promote longevity.*

Overall, you probably couldn't get a heartier and more beauty-boosting breakfast if you asked us. This recipe also includes raisins, chia seeds, ginger, and carrots! We add in a scoop of our favorite vanilla protein powder for added protein, but if you aren't planning to mix that in please adjust the liquid to accommodate.

We top it all off with stone fruit ( we have been loving apricots lately), almond butter, and walnuts. The recipe has a great texture and loads of flavor so be ready to be as addicted to this recipe as Carolyn is by the end of the week.
