Our cherry and matcha parfait is equal parts refreshing but also flavorful. We love making this vegan and collagen-boosting breakfast (or snack) because it is easy, only a few ingredients, and because it also gives us a little energy boost!
We personally chose to use a coconut-based yogurt to add in a little tropical taste for our recipe, but you can use an almond, cashew, or whatever other vegan-based yogurt you prefer. Just note whatever flavors or added ingredients are in the yogurt will need to mix well with the cherry and matcha flavor.
You'll want to split the 2 cups of yogurt into two bowls (1 cup in each bowl about or however much you want for each flavor). In one bowl add in half a scoop or stick pack of our vegan matcha collagen support blend. In the other bowl add in muddled cherries to the other. Mix them both separately. When you are ready you can begin to layer the yogurts putting in your toppings of choice in between.

Our cherry and matcha parfait is a great and easy way to get in some of the benefits of matcha, but you can also drink our matcha blend! It is easy to make with 8 oz of hot water or you can make it into a latte.
We like to add granola for added texture into our parfait. We have two easy granola recipes if you would like to make your own. Our 1 bowl perfect superfood granola is perfect for parfaits or if you want to edit the recipe a little, our no-bake turmeric granola bars could easily become a spreadable granola topping. Whichever granola you choose has the ability to add more benefits to your parfait, so make sure if you aren't baking your own that you check the ingredients before buying!
Once you have layered the parfait to your desired amount, you can top with cherries and some more granola. The cherries add in antioxidants, which are amazing for our collagen production and for our overall health!*

Vegan Cherry-Matcha Parfait
We love this refreshing yet sweet yogurt parfait for breakfast or as an energy-boosting snack. We use our matcha vegan collagen support blend to add in extra beauty benefits as well.*
2 cups coconut yogurt
1/2 scoop Copina Co Matcha Beauty
1/2 cup granola
1 cup fresh cherries
Split the yogurt into two bowls. 1 cup going into each, forming the 2 cups needed for the recipe.
Muddle the cherries in a separate bowl.
Mix in the Copina Co Matcha Beauty into one and muddled cherries into the other.
Start layering the yogurts, adding granola between each later.
Top with cherries on top.
