We will say it so you don't have to: peppermint mochas are not just a holiday drink! We have created the perfect summer peppermint mocha with our cacao calm vegan collagen support blend. It is equal parts refreshing as it is delicious. Plus, no added sugars or thick syrups, we add in real peppermint extract! Adding in our cacao calm blend, instead of normal cacao or cocoa also helps aid your hair, skin, and nails.*
For this recipe, you will be needed a blender. We will be creating our own mocha mix and this mocha mix can make up more than one cup of our peppermint mocha so if you are making for one, adjust the measurements accordingly! To make our mocha mix we will combine 2 cups of coffee, 1 TBS of our Cacao Calm vegan collagen support blend, 2 dates pitted, 1 TSP of vanilla extract, and 1/2 a TSP of peppermint extract. If you want more or less peppermint taste you can adjust it to be 1/4 a TSP or 3/4 TSP.
If you want to pre-make the mocha blend for the week, feel free to blend and then store in an air tight container in the fridge. We do not recommend storing for more than a week. If you are pre-making the mocha mix, make sure to shake well before adding to your frothed milk to make your latte.
The last step will be to combine 1/2 of your mocha mix to 1/4 cup of your frothed plant-based milk of choice. We recommend using our hand-held whisk because its results are unbeatable when it comes to plant milks.

Iced Peppermint Mocha

Peppermint mochas do not have to just be enjoyed in December. We think they should we year-round! We made this skin-loving peppermint mocha with the summer sun in mind, adding in our cacao calm beauty blend for a little glow-boost.*
2 cups chilled coffee
1 TBS Copina Co Cacao Calm
2 dates, pitted
1 tsp vanilla extract
1⁄2 tsp peppermint extract
1⁄4 cup milk of choice, frothed (plus more if you like it milkier)
To make our mocha mix, blend chilled coffee, Copina Co Cacao Calm, dates, vanilla extract, and peppermint extract in a blender on high until well combined. Store in an airtight container.
Combine frothed milk with the mocha mix (around ½ cup for one serving), and top with ice. Enjoy!
