Prepping overnight oats is a quick and easy way to make sure you are getting a nourishing and filling breakfast. Sometimes we like to make our oats a little sweeter, which makes these Peanut Butter, Chocolate, and Vanilla overnight oats perfect. What is great about these overnight oats is you can make them as sweet or not sweet as you might be in the mood for. Try to keep that in mind and have fun with your oats! Think of them as a small way to make tomorrow start with something nourishing and filled with intention.
The base of our candy bar in a bowl oats is obviously rolled oats, your milk of choice, some yogurt to thicken the mixture, chia seeds, maple syrup, and peanut butter (or your nut butter of choice). Use what you have on hand and if you are in the mood, maybe add in some vanilla extract, cinnamon or other spices, or maybe even some hemp seeds! Once all your ingredients have been mixed together, we can add on our chocolate layer! If you don't have time to add this chocolate layer, try throwing in some dark chocolate chips or cacao nibs! To make our chocolate shell, you will melt 2-3 squares of a dark chocolate with 1 tsp of coconut oil in a small sauce pan on low heat. Once thoroughly melted, pour over the oats to make a thin topping of chocolate.
Cover and let sit overnight in the fridge to enjoy for breakfast!
